Happy Friday Friends! I shared on instagram this week that I was preparing some dump & go freezer meals before baby arrives. I am 38 weeks along, and feeling like she could come any day now so we are preparing as much as we can. I wanted some healthy and easy meals to throw in the crockpot our first couple weeks home with new baby. I also included a grocery list of some simple, easy, and healthy snack options I will make sure we have stocked in our home before heading to the hospital. At least that is the hope unless she decides to throw us for a loop. haha
F R E E Z E R Ā M E A L S
Healthy Turkey ChiliĀ
- 1LB ground turkeyĀ
- 1 large sweet potatoĀ
- 1 can black beans (drained)
- 2 chopped bell peppersĀ
- chopped onionĀ
- 1 can pinto beans (drained)Ā
- 1 can fire roasted tomatoesĀ
- I can tomato pasteĀ
- seasonings ( I use cumin, chili powder, onion powder, garlic powder, cayenne pepper, paprika, and a little chili lime powder)Ā
- 2 cups chicken broth (this will wait and go in when you put it in the crockpot)Ā
Directions:Ā
- Add all ingredients into a gallon sized ziplock, I double up.Ā
- leave out the chicken brothĀ
- write on the bag what it is, the directions, and how long its good for (3 months in the freezer)Ā
- before dumping into the crockpot thaw in fridge for 24 hoursĀ
- add chicken broth and cook on high 4 hours or low 6-8.Ā
- add toppings of your choice (we add cheese and avocado)Ā
Ā BBQ Pulled Pork or ChickenĀ
My husband and I are not big pork eaters, we would normally make this recipe with chicken but for some odd reason making it with pork this time sounded yummy. Pregnancy hormones I guess. hahaĀ
- Boneless pork shoulderĀ
- seasoning (garlic powder, onion powder, chili powder, salt and pepper)Ā
- 1/2 cup bbq sauceĀ
- 1/4 cup apple cider vinegarĀ
- 1/4 cup chicken brothĀ
Directions:Ā
- Place pork shoulder in your freezer bagĀ
- whisk together remaining ingredients and pour over topĀ
- Fully thaw before cookingĀ
- Cook on high 4-5 hours or low 8-10Ā
- Enjoy over rice, or on a sandwichĀ
Lemon Dump ChickenĀ
- Chicken breasts ( we just used 2 since it’ll be just the two of us)Ā
- 1/4 cup olive oilĀ
- parsleyĀ
- 2 tbsp lemon juice (I doubled this just because I love it extra lemon-y)Ā
- salt & pepperĀ
Directions:Ā
- Add all ingredients to ziplock bagĀ
- thaw before cookingĀ
- Add 1 cup chicken brothĀ
- Place in crockpot on high 4-5 hoursĀ
- I like to shred mine once done and have over rice or quinoaĀ
White Chicken Chili
- Chicken breasts (again we only used 2 on the larger side)Ā
- 2 cans cannellini beansĀ
- 1 cup salsa verdeĀ
- 1 can mild green chilisĀ
- 2 tsp cuminĀ
- 1 tablespoon chili powderĀ
- 2 tsp paprikaĀ
- salt & pepperĀ
- 1 cup frozen cornĀ
- onion choppedĀ
- 3-4 cups chicken brothĀ
Directions:Ā
- Add all ingredients besides the broth to the bagĀ
- Good in the freezer for up to 3 monthsĀ
- thaw completely before cookingĀ
- dump contents into crockpot, cook on low 6-8 hours.Ā
Turkey Sausage Breakfast BakeĀ
- 3 eggsĀ
- 2 cups egg whitesĀ
- sautĆ©ed mushroomsĀ
- spinachĀ
- turkey sausageĀ
- gold potatoes (I cut up about 8 of the little ones)Ā
- cheeseĀ
- salt & pepperĀ
- seasonings (garlic powder, onion powder, little cayenne, and paprika)Ā
Directions:Ā
- preheat oven to 400, bake potatoes, while those are baking sautĆ© sausage and mushroomsĀ
- Allow both to cool completelyĀ
- mix everything together in baking dish and freezeĀ
- Allow to thaw overnight, bake at 375 for 30 to 40 mins.Ā
Lactation Balls or “Ta Ta Balls”
Ā
- 3/4 cup oatmealĀ
- 3/4 cup peanut butter or almond butter Ā
- 1/3 cup dark chocolate chipsĀ
- 1/2 cup flax seedĀ
- 2 tbsp hemp seedsĀ
- 1 tbsp chia seedsĀ
- 1 tbsp brewers yeastĀ
- 2 tbsp honeyĀ
- 2 pinches saltĀ
- optional – cinnamon, vanilla extract, cranberries, coconutĀ
Directions:Ā
- Mix everything togetherĀ
- place in fridge for 30 to 40 minutesĀ
- use an ice cream scoop or large spoon to make golf ball sized ballsĀ
- put in the fridge for up to a week or freeze!Ā
