Happy Friday Friends! I shared on instagram this week that I was preparing some dump & go freezer meals before baby arrives. I am 38 weeks along, and feeling like she could come any day now so we are preparing as much as we can. I wanted some healthy and easy meals to throw in the crockpot our first couple weeks home with new baby. I also included a grocery list of some simple, easy, and healthy snack options I will make sure we have stocked in our home before heading to the hospital. At least that is the hope unless she decides to throw us for a loop. haha
F R E E Z E R M E A L S
Healthy Turkey Chili
- 1LB ground turkey
- 1 large sweet potato
- 1 can black beans (drained)
- 2 chopped bell peppers
- chopped onion
- 1 can pinto beans (drained)
- 1 can fire roasted tomatoes
- I can tomato paste
- seasonings ( I use cumin, chili powder, onion powder, garlic powder, cayenne pepper, paprika, and a little chili lime powder)
- 2 cups chicken broth (this will wait and go in when you put it in the crockpot)
Directions:
- Add all ingredients into a gallon sized ziplock, I double up.
- leave out the chicken broth
- write on the bag what it is, the directions, and how long its good for (3 months in the freezer)
- before dumping into the crockpot thaw in fridge for 24 hours
- add chicken broth and cook on high 4 hours or low 6-8.
- add toppings of your choice (we add cheese and avocado)
BBQ Pulled Pork or Chicken
My husband and I are not big pork eaters, we would normally make this recipe with chicken but for some odd reason making it with pork this time sounded yummy. Pregnancy hormones I guess. haha
- Boneless pork shoulder
- seasoning (garlic powder, onion powder, chili powder, salt and pepper)
- 1/2 cup bbq sauce
- 1/4 cup apple cider vinegar
- 1/4 cup chicken broth
Directions:
- Place pork shoulder in your freezer bag
- whisk together remaining ingredients and pour over top
- Fully thaw before cooking
- Cook on high 4-5 hours or low 8-10
- Enjoy over rice, or on a sandwich
Lemon Dump Chicken
- Chicken breasts ( we just used 2 since it’ll be just the two of us)
- 1/4 cup olive oil
- parsley
- 2 tbsp lemon juice (I doubled this just because I love it extra lemon-y)
- salt & pepper
Directions:
- Add all ingredients to ziplock bag
- thaw before cooking
- Add 1 cup chicken broth
- Place in crockpot on high 4-5 hours
- I like to shred mine once done and have over rice or quinoa
White Chicken Chili
- Chicken breasts (again we only used 2 on the larger side)
- 2 cans cannellini beans
- 1 cup salsa verde
- 1 can mild green chilis
- 2 tsp cumin
- 1 tablespoon chili powder
- 2 tsp paprika
- salt & pepper
- 1 cup frozen corn
- onion chopped
- 3-4 cups chicken broth
Directions:
- Add all ingredients besides the broth to the bag
- Good in the freezer for up to 3 months
- thaw completely before cooking
- dump contents into crockpot, cook on low 6-8 hours.
Turkey Sausage Breakfast Bake
- 3 eggs
- 2 cups egg whites
- sautéed mushrooms
- spinach
- turkey sausage
- gold potatoes (I cut up about 8 of the little ones)
- cheese
- salt & pepper
- seasonings (garlic powder, onion powder, little cayenne, and paprika)
Directions:
- preheat oven to 400, bake potatoes, while those are baking sauté sausage and mushrooms
- Allow both to cool completely
- mix everything together in baking dish and freeze
- Allow to thaw overnight, bake at 375 for 30 to 40 mins.
Lactation Balls or “Ta Ta Balls”
- 3/4 cup oatmeal
- 3/4 cup peanut butter or almond butter
- 1/3 cup dark chocolate chips
- 1/2 cup flax seed
- 2 tbsp hemp seeds
- 1 tbsp chia seeds
- 1 tbsp brewers yeast
- 2 tbsp honey
- 2 pinches salt
- optional – cinnamon, vanilla extract, cranberries, coconut
Directions:
- Mix everything together
- place in fridge for 30 to 40 minutes
- use an ice cream scoop or large spoon to make golf ball sized balls
- put in the fridge for up to a week or freeze!
