Hearty Wild Rice Chicken and Mushroom Soup

Now that the weather is officially changing and we are getting into the cooler months, all I want is hot, hearty, yummy dishes. This one does not disappoint. Full of tender chicken, rice, and vegetables, it has it all! The best part is, you can throw all this in the crock pot before work in the morning and have it ready and waiting for you by dinner time! 

I N G R E D I A N T S 

  • 1 cup uncooked wild rice 
  • 2 chicken breasts or 4 chicken tenders 
  • 3 cups low sodium chicken broth 
  • 1/2 cup whole milk 
  • splash of heavy cream 
  • 1 medium carrot – diced 
  • 1 cup celery – chopped 
  • 1 cup sliced mushrooms 
  • optional 1 cup kale or spinach – chopped 
  • 1 packet ranch seasoning 
  • 1/4 cup low fat cream cheese 
  • 1 cup shredded cheese ( I used cheddar) 
  • 1 cup chopped turkey bacon for topping 
  • salt & pepper to taste 

D I R E C T I O N S 

  • combine all ingredients in crockpot (chicken on the bottom) 
  • let cook on high for 4 hours or low for 6-8 hours. 
  • before serving pull chicken out and shred 
  • add chicken back to crock pot, stir all together 
  • serve and add toppings of your choice!
