Today I am coming at you with my favorite (healthy-ish) and quick peanut butter oat bar recipe! Our local coffee shop sells these PB oat bars and I loved them so much I was getting them daily to have as a little night time snack. I realized I could probably make them myself, they would probably be healthier and I would save some money! haha. So here is the super simple recipe below. They make a great afternoon snack, or a nighttime treat when you are curled up starting a movie!Ā

I N G R E D I A N T SĀ
- 1/2 cup palm coconut sugar Ā (or brown sugar )Ā
- 1 cup natural peanut butterĀ
- 2 tsp vanilla extractĀ
- 1 cup oat flour ( or any flour of your choice)Ā
- 1 cup rolled oatsĀ
- 1 tsp baking sodaĀ
- 1/4 tsp saltĀ
- 1/2 cup milk of your choice ( I used almond milk)Ā
- dark chocolate chipsĀ
I N S T R U C T I O N SĀ
I use a kitchen aid for mixing or a hand held mixer. If you don’t have either I am sure they will still turn out just fine and you’ll get an arm workout!Ā
- preheat oven to 350Ā
- oil pan or use parchment paperĀ
- with your mixer, mix brown sugar and peanut butter until well combined. About 3 minutes.Ā
- Add in flour, oats, salt, and baking soda. The dough will get very thick and clumpy. This is supposed to happen. don’t fret. hahaĀ
- Slowly add in your milk while mixing, until more of a dough forms.Ā
- Fold in your chocolate chipsĀ
- Press the dough into your 9×9 baking dishĀ
- bake for about 15-20 minutes, they will be lightly golden on top. I always lean toward the lesser amount of time, they are better when they are moist and a little gooey.Ā
- Cut into squares and enjoy!Ā
