Hi All! Today I am sharing one of my favorite fall/winter soups. This recipe is super simple and super quick! Makes a great weekday meal and is also great for a crowd!
I N G R E D I A N T S
- 1 bag frozen tortellini (I use the ones from Costco)
- 1/2 cup heavy cream
- 1 28oz crushed tomatoes
- 2 cups chicken broth
- salt & pepper to taste
- garlic powder
- Italian seasning
- 1 cup Italian cheese blend
- Parmesan cheese
I N S T R U C T I O N S
- In a large pot, heat crushed tomatoes over medium heat.
- Add chicken broth, stir together. Continue to cook over medium heat for about 5 minutes.
- Add in your heavy cream and your seasonings and Italian blend cheese . Bring to a boil.
- Once boiling add in the tortellini. Put a top on your pot and let simmer until tortellini is plump and sauce is thicker. About 10 minutes.
- Serve right away with parmesan cheese on top
