Dijon Salmon With Roasted Veggies

If you are a salmon lover like we are, this is one recipe to try! We baked ours on the bbq but you can easily make this in the oven or even stove top. This salmon would be awesome over rice and veggies, a salad, or with potatoes and veggies! It comes out so flavorful, moist and flaky! 

I N G R E D I A N T S

  • Salmon ( we used skin on and boneless from Costco) 
  • 1/4 cup fresh parsley, finely chopped 
  • 1/4 cup dijon mustard 
  • Juice of 1 lemon 
  • 1 tbsp avocado oil (or oil of your choice) 
  • 3 garlic cloves, chopped 
  • salt and pepper to taste (I also like to use lemon pepper) 

D I R E C T I O N S 

  • Pre heat oven to 375 or bbq. Mix together the mustard, parsley, lemon juice, oil, salt & pepper and garlic in small bowl. 
  • Dry off your salmon and place it on a parchment lined baking tray or if bbq ing place salmon on double lined foil. Coat the top of your salmon with the entire mustard mixture mix.
  • bake or bbq salmon for 18 to 20 minutes.
  • serve with rice, veggies, potatoes, or desired side! Enjoy!
